Recipe of the Month



                             Jeff Calvert’s Special “Easy” Chicken Dish




       You all commented on the chicken I made last Rotary club Christmas party, so here is the recipe!
       (Watch the video for further instructions.)

                                               Ingredients:
                                               10-12 Chicken drummies (big ones)
                                               2 tablespoons oil (for baking)

                                               Marinade:
                                               1/4 cup  soy sauce             1 tablespoon honey
                                               1 clove garlic                 1 teaspoon sugar
                                               1 teaspoon grated ginger       salt / pepper
                                               2 tablespoons dry sherry

        Preparation: (Drink some wine during the entire process--it helps.)
             Mix all marinade ingredients together in bowl.
            Bone chicken legs and pull skin back over leg.
            Place chicken in large plastic bag (strong one)
            Pour the bowl of mixed ingredient into the plastic bag.
            Put the bag in refrigerator for 24 hours prior to cooking.
            Every few hours, shake bag and turn over to spread the marinade around the chicken prices.
        Cooking:
           Preheat oven to 350 degrees

            Put oil in large baking tray
           Spread the chicken pieces in tray separate from each other
            Bake 35 mins and check cooking, maybe 10 minutes more (drink some wine while waiting).
            Serve on platter or in a basket casual style (again with wine)

       This is a DOUBLE RECIPE that you can halve. I always add an extra portion of  sherry.  ENJOY!
